I was cruising through "Wally World" with all the other Wal-Martians when I came upon this.

Yep! a self contained pumpkin bread kit from Libby. With a hurricane blowing off shore, the winds gusting and rain sporadically falling, I thought this might be the perfect afternoon, indoor amusement, since "The Young and the Restless" was coming to an end and I would have time on my hands.
The kit contained pumpkin, the pre-mixed flour and spices and an icing packet. All you needed to add were 4 eggs, 1 cup of water (Orange or apple juice optional) and 1/2 cup of oil.

The only equipment needed were (2) 9x5 bread pans or muffin pans. Since it made 2 pumpkin loaves or 36 muffins, I decided to do some of each. The best part was it could all be done by hand in a big bowl so cleanup would be a snap!

Once cool the sugar glaze was applied.

This was a fun bake. Yea! using a packaged deal for bakers is cheating, but it was easy, fun and the final result had a great taste and nice texture. These freeze well, so when it gets a little chillier out, it'll be a nice treat with a cup of tea or coffee. .... if they last that long!

Packages of mix are great and aren't cheating in my book.  I bet adding the orange juice gave it a whole different dimension in flavor.  Have you tried baking in your pit?

Do you old timers remember smokin Don from pelletheads? Now that Queball can post pictures, he is all these years later picking up where smokin Don left off. Anything and everything gets cooked on the pit. The variety is refreshing.

Bread looks great. Love anything with that sort of glaze.
