Rib Eye is what I've always used.
Amaroso rolls are only available here from Sysco.
Have not checked yet to see if they sell to public.
A good Cheesesteak is something I miss from when I lived on East Coast.

This is a 12" roll and the reason that it looks like it is falling over is because it is because it is super filled with meat.  Has to be more than a one pound sandwich.  I should have weighed.  And this is their small sandwich for $13.  Large is 18" roll for $16.

You are an hour west on 78 and then 22 to get to the place I bought that one from.

Next time I’ll trying cooking the beef on the pellet grill and make it a cheesesteak with bbq sauce and fried onion straws

They are individually frozen and the box contains six 6-pack bags. You really can’t beat an Amoroso roll for cheesesteaks, hot subs, or even cold hoagies unless you live an an area like the northeast where bakeries and hoagies are part of the culinary fabric.

So you bought rolls at RD, how about the meat?  If so, would you mind giving item# for each as I am going to RD this week and would like to see if they carry the items.  Also, the one steak right in the center looks a lot thicker then the others?  Are they uniform or are they different sizes?

Thanks, bummer though.  No Restaurant Depot in Albuquerque.
WebRestaurantStore used to sell them frozen by the case, but don't anymore.
I used to work in Philly, so I am familiar with the rolls.
