One of the BBQ places we like to go, does Salmon on Fridays, last weekend was their last week for the year, I usually pick up a chunk or two if they have any left over when we go. She gave me a piece, said it is the tail portion. I made some salmon salad along with some toasted pumpernickel tomato and lettuce. made for a good mid morning breakfast.

Went to Restaurant Depot yesterday.  Got a few cold cuts, Turkey, Bologna & Hot Capicola.  Made a sandwich tonight of those 3, on a wonderful Hoagie roll I bought there (I would pay good money to be taught how to make a roll like that).  Was not sure how the turkey would go with the Copa and the Bologna.  It worked very well!  Mayo, San Marzano & Bell Pepper from the garden and a touch of lettuce.  A squeeze of Spicy Catalina for good measure!

My rendition of the Italian Hoagie!

I made my version of a pepper stout beef sandwich.  Used a recipe from this site for pepper stout beef, and utilized Lew's late addition of onions and peppers.  Smoked a chuck roast, then braised with a mixture of Guiness Extra Stout and beef broth. Added onions and peppers later, but try to keep on top of beef so they don't get soggy. I separate beef and vegetables after cook. I like the firm texture. Put on Bollinio role with beef, veggies, and provolone cheese. Toast until cheese is melted. Served with AuJus. Pepper stout beef dip!!!

I used the same recipe over Labor Day. The only problem was that I did not have any stout, so I substituted Dr. Pepper. Next time I will stick with the stout. Many of the recipes on this site have turned into "go to" classics. This is one of them!

Cheesesteak time again!  The twist is, the meat is Beef Tenderloin!  It will be wit! Will be a good size! The proofing rolls look better then the cooked ones!

Does not quite have the flavor of Rib-eye, but it is a very close 2nd!  Could only eat half, I do not recommend 10 month old French fries!

Looks great but I would have not cooked the meat as long as it looks like it was cooked.  I try to pull it off as soon as I see no more red.
