Trimmings from Brisket Flat?

After doing a 6 pound brisket flat on my rotisserie using a basket I want to get another one.  I saw a great one today, but it was 8 pounds which would not fit in my basket.  What would be a good option to do with the meat I trim off where it will fit in the basket.  I think grinding it into hamburger is one option if I had a meat grinder.  Are there any other options?  I would most likely have to cut off an area about 2" by 10".

I would cook it on the grill along with the rotisserie.
A lot of work to clean up the grinder just to make that small amount of ground beef, if you had a grinder.  :)

Cut it into cubes and make burnt ends
