Quick Question for Pellet Wizards
« on: February 26, 2021, 06:29:26 PM »

I have Company flying in this evening and I have a three+ lb. sous vide rib roast thawed in the refrigerator. What is your best guess as to how long in the pit set to  225

I would plan on an hour and a half per pound to get an IT of 135 degrees.  You can always FTC it if it finishes early.
