Brisket Time

Since I will be ordering a ton of Lumberjack Pellets in a couple weeks, I thought it would be a good idea to use up some of what I have to make a little more room.
Have about 2 40lb bags left, so a Brisket should use up 12lbs or so.
Won't free up much space but any is better than none, since I will be getting more pellets than I thought.
Planned on splitting the ton 4 ways but one friend said he doesn't use his CampChef much and didn't want any, so a 3-way split.


So anyway, here is the brisket rubbed down.
Will go on the grill late tomorrow afternoon, so I'll post pics of the finished product Wednesday.

I do like a good bark, but has to be edible.
Did one once where it was like a rock. Not sure what happened with that.

Rest of pictures.
Cut flat into pieces, vacuum sealed and froze.
Chopped the point up to go on tortillas (homemade).

Chopped brisket and Hatch Green Chilies on a tortilla.
No sauce of any kind. Was delish.

That all looks very good.  How long did you cook the brisket and at what temp?

Put it on at 8:00 PM, cut point off at 6:30 AM and removed flat. Point came off at 8:00 AM.
I was surprised it was that quick since I cooked at 225 (I thought).

On that note, it actually wasn't 225, only 215.
I trust my ThermoWorks more than the RTD.
Especially since I had 3 probes plugged in and the Smokes turned on beforehand, and all 3 probes read air temp within 1 tenth of each other.
Guess I am going to have to do some testing and contact Memphis to see if there are any settings in the firmware than can calibrate the RTD.
First time monitoring the grill.

Getting out of bed at 6:00 AM wasn't my idea of a good time.  ???
