Meat mixers

I've never used one, but if I were to buy one it would be an LEM just because of their brand name equity.  I have the grinder and jerky slicer and have had great results with it.

Just rubber gloves on the hands here.
I cut the meat in sizes for the grinder and hand mix the seasoning in and into fridge overnight.
Next day run it through the grinder and get a partial mixing by it.
Then finish by hand.

I had a manual 20 lb mixer but my wife and I found it tiring to use with a full load so I bought the LEM mixer that is driven by my #8 LEM grinder. Works great but needs to be filled with at least 10 lbs of meat to work properly. Cleanup is a little more involved as I remove the drive gearing unit as it should not get wet and then re-assemble after washing the mixer. Not a big deal as the mixer does a good job when you have a lot of meat to mix with spices.

The stand mixer, KitchenAid, does a good job on less than 5 lbs but needs watching as it tends to want to fling meat across the kitchen counter if it is filled too much.  :2cents:

I don't think that would work well for strips of meat. I use mine for ground meat.

If I do a wet cure/seasoning I just use gloves and my hands.  Most of the time I just dry season and layer an layer it on a sheet pan then into a plastic tub. What I like it it comes out nice and flat, no untangling the strips, easy to lay out on the racks.
