Fresh Peach Pie

Neighbor has a peach tree right along the fence between us. Too many peaches he says for him to eat so asked me to help myself. And if you don’t pick them the birds get in and eat them.

Have not made a peach pie in some time. Can’t resist with all the peaches available

Blanch the peaches in a pot of boiling water for about a minute and the skins come right off.

Peaches sliced with 2 tablespoons of lemon juice added

Mix
1/2 cup flour
1 cup white sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground Nutmeg
1/4 teaspoon of salt

Mix the above then mix with the peaches

I buy Pillsbury pie crusts rather than make my own.

Pour into pie shell then add a few dollops of butter

Add too pie crust then pinch edges with a fork and add slits for venting.

Add tin foil around the edge to keep the crust from burning

Bake at 450 for 10 minutes then reduce heat to 375 for another 30-40 minutes.

All done!

Needless to say that did not last long.

Goes great warmed up with vanilla ice cream.

I ended up making 3 pies total and gave a whole pie to my neighbor to express my gratitude for his generosity.

Still have a bunch that I will slice up and freeze.

I don't think I've ever had peach pie.  It looks great.  I'd be all over it.

Next, how about homemade peach ice cream. I always thought peaches made the best homemade ice cream.
