One of my favorite desserts is homemade Lemon Meringue pie.  So this morning instead of reading all of the negative news the baker decided to make one for tonights dessert.

Love the pie.

Woman used to make me one now and then when i was little. As I got older I told her I don't need the whole thing just make the filling. The crust is only there in case you don' have utensils. So most of the tine I got homemade lemon pudding for lack of a better term, I got egg and I would get pumpkin custard in a pan.

I have no had lemon pie filling for a long time, I need to find a recipe. Hers was always translucent like Durkee brand in the box.

 There is nothing like a HOMEMADE lemon meringue pie. We prefer a Graham Cracker crust - so good!

 When it comes to purchased pies; they aren't the same. For the most part either overly sweet, lacking flavour, or have some off taste.

I use my regular pie crust however I roll it out over crushed graham crackers. IMO this at least for me gives me the best of both worlds.
