A little more Tri-tip...

This is the closest I have seen back here to the size and shape of the Tri-tip I would buy in Fresno.  Kristin got it here in Mayberry and it has Wet Aged for about 40 days.  The Memphis Pro still drops that 6 on the controller, so that is 621° not 521°.  10 minutes at 625°, then turn and turn controller to 375°.  At an IT of 75° I turn again.  The Memphis was about 480° at that point.  At 100° IT I will turn for the last time and pull at 130° shooting for a finished IT of 140ish°...

A tuna fish sandwich, with mayo, celery & lettuce, hard to beat!

Luckily a good cut of meat as overcooking did not ruin it for me.  I hope Kristin enjoyed hers, as it was the end so it had no pink.  I gotta get the Tappecue hooked up on the patio, and I have to quit going so far into the meat with the probe!

That is what we  have, usually in a tortilla.   We try to have a couple cans every week, so it does get a bit old.
Trying the get the HDL's (the good cholesterol) up.

Occasionally get some other fish.

My HDL's continue to be on the very low end of the range that they are preferred to be in.  I need to do a better job of eating the handful of unsalted mixed nuts daily.  I don't eat fish but take 4G of prescription fish oil pills daily.  Constant battle with my limited desire to eat foods that are good for me.

LDL were 49 in September, but I am on quite a few medicines to make that happen.

We used to take Fish Oil capsules then switched to Flaxseed Oil.  Don't recall why.

I am skeptical of all the different products out there for various conditions that have the label that says something like "This product has not been evaluated by the FDA".
Not saying they are bad, just don't know if I'm throwing my money away.
