Christmas Morning Fattie

Smoked a Fattie for Christmas breakfast!  Not the same fattie as most Californians think of!

Heated up some potatoes in a skillet with some oil.  When tender, added onion and red bell pepper.  When they got to the consistency I like, I added eggs and scrambled the entire mixture.  When eggs were done, added a lot of Mexican blend cheese until melted.  Removed from stove top and made prepared the rest.

Took a full package of bacon and made a 7 slice x 7 slice bacon weave.  Put a 1 lb package of breakfast sausage (Jimmy Dean in my case) into a 1 gallon ziploc bag and rolled until the sausage evenly filled the bag.  Cut down each side of the bag and laid the sausage on the bacon weave (should fit perfectly).  Seasoned the sausage and added the egg filling that had cooled.  Rolled.  Sealed the sausage on each end and put tooth picks in each end to keep the bacon in place (7 tooth picks in each end).  Smoked at 275°F until everything was at least 165°F.  Took about 1 hour and 45 minutes in my case.  It was raining and windy, so I think it took longer than it should have.  Here are the results.





First time I added eggs and it was the best by far.  Normally would put on English Muffin with poached egg and hollandaise, but too lazy on Christmas.  Was great by itself.

I have tried them in the past, but mine never turned out looking like that. That looks great.

 Excellent write-up and photo's.  By description, the taste had to be very good.
