Oil eater will melt away tough grime.
otherwise i use $0.99 store spray cleaner, forgot what it is.

I keep my SS inside the pit where the fire keeps it clean, paint on the outside for me, Pellet cooking for me is to minimize effort as much as possible....

Pure ammonia on warm surface works as good as anything I've found to remove the smoke stains on ss.

 UPDATE: After close to ten 400º and under cooks ,the stainless looks as it did when I applied the mineral oil. Just can't believe how well it has managed to stay on..Kind of like the Energizer bunny.

I've used a product called "Carbon Off". It removed burnt on grease an stains effectively from every thing I tried it on. CAUTION: this stuff will ruin almost anything it comes in contact with that is not metal. I spilled a drop on my Corian counter and it burned a hole so deep that I could not buff it out.  >:(

 Re scratches:  Find a "FLAT" sanding block. A good size would be ~ 2" wide X ~ 3" long. Wrap some fine emery or sand paper (320 or 400 grit) around it. Make sure the surface with the scratches that you want to restore is clean. Place the block on the damaged area and sand "making sure you are sanding exactly parallel to the grain"..Just do a few light passes then wipe with a clean cloth and examine the surface..It may take a few more tries..Check if the new polish marks match the originals in size. If not adjust the grit accordingly. When done apply a light coating of mineral oil..
