  • Thawed 2 racks of STL cut ribs in the fridge over two days.  Had some maintenance to do on the Memphis before I could use it.  Had some pellets in the rear hopper get wet.  Scooped most of them out and then vacuumed down to where I could see both augers and the pellets were solid.  Refilled with some Perfect Mix that had still be in the UPS shipping boxes on a pallet in the garage for the last 6 years.  It took about 30 minutes or so for the grill to get up to 275° set temp.  Plenty of clear blue smoke bellowing from the vents at back of the grill.  Put the ribs on about 7:45am after putting a rub on the top of them.  Decided to skip putting rub on the bottom.  Did not pull off membrane but did slice with a knife near every bone.  I did place some one inch deep aluminum pans on the lower grate and put the ribs on the second rack.  The cabinet where the ash and grease drips into is a mess and needs a cleaning this Fall.  I didn't want to risk a fire of having grease drip onto the grease deflector which is why the shallow pans are on the grates.  I am going to get a few pics now and then it will go back into the Ronca mode for about 2.5-3.0 hours.

  • I mix 4 commercial rubs together to apply to the top side of the ribs.

  • After about 4.5 hours I pulled the ribs and sliced them up.

      BTW - we finished off our rack of ribs last nite.  Cooked @275º ~ 31/2 hrs to close to 185º -almost passed the bend test. Memphis Dust rub, drizzled w/ maple syrup ~ 2 T,  spritzed w/ A C vinegar hourly.

      Best ribs yet. Good chew & taste. NOT under cooked as I thought they might have been.

    My friends that were over the house for our fantasy football league draft enjoyed them.  Everyone said they were great.
