Prairie Fresh Ribs
« on: October 13, 2022, 09:29:20 PM »

Midwest Walmart's have replaced the Smithfield ribs with Prairie Fresh. Good pricing in the 3-4 range, so I bought some. I'm told that many Texas guru's prefer them. Individually vacuum sealed. Which I really like. Anyone have experience with this product??

Yes I see them in PA at times. I was out the other day and saw both smithfield and the prarie fresh. They have green printing on them. I have bought them and had no issues with them.

Don't think I've seen them.  I've had the Smithfield St Louis ribs though.

I have never seen them before.  What is the average weight?

The ones I have bought were about the same as any other. They did seem to be cut nicer, didn't look like they dropped the pig in a shredder.

They only had a few of the St. Louis ribs from 3.4 to 3.8 or so but they might run higher.  Also had full spares and BB's. but did not look at the weights.

Kristin brought some home shortly after this thread was posted.  This is about an hour in at 300°.  I like the uniformity of the trim.

I was a little disappointed with the first rack of spares, as part of the chine was still attached. If they say St. Louis style then they ought to be trimmed right!! However, they were so good we forgave them.  From now on, I plan to just go ahead and cook them as trimmed, and then trim them properly after the cook. That way the trimmings can be used as chewy snacks.  :lick:

These were good.  I did not see a lot of difference between these and other brands I have tried.
