4th of July Cooks?

Anyone cooking on the 4th?  I think Bent is going to do a rack of ribs and I will make beans and potato salad and maybe some cornbread.

I may make some smoked sausage burnt ends on the Weber gasser tomorrow to take to a buddies picnic.  For the rest of the weekend, I also have 2 filet mignons, 2 ribeyes, and 2 NY strip steaks to make.  3 chicken breasts marinated in Lawry's Caribbean Jerk.  And about 4-5 different flavors of sausage links to grill including Johnsonville Philly Style sausage (filled with peppers, onions, cheese).

I'm guessing it will be Fall before I think about fixing any of my pellet grills.  Wish I knew someone that was interested in doing the work for me  ;D even if I had to pay them.  I miss smoking ribs probably the most.

I put on a 17 pound brisket last night and I finished it up today.  It is sliced and ready to reheat tomorrow at my brother's house.

I think we are to go to her sisters, where we always have the same thing. Over cooked frozen burgers and under cooked cheap hot dogs.  It is to rain here so if that happens I am not going, and I have an 18 pack of johnsonville brats that may be be made here. With some grilled onions and peppers, provolone and frenchs yellow.

3 pellet jams, 1 with broken ignitors and a potential bent auger, and 1 that needs to be tossed that has mold/moss growing in it.

Baby back ribs for me. I'm going to try my honey garlic rub on them this time instead of my normal seasoning.

I recently moved, and there is a neighborhood party with fireworks tonight. They are having a chili cook-off contest as part of the festivities. A friend of mine makes a Mexican chili, "Carne Guisada," that is very good. He gave me the recipe before I left town and the peppers to make the sauce. I figured I would give it a go and see what happens. Hopefully I can do it justice. If nothing else, it should be a good way to meet some new neighbors!

Knock it out of the Park JD!

It was a fun night and there was some good chili. The judging was open ballot, everyone voted for their favorite. It was more of a popularity contest than an a judged competition. It was no surprise that the president of the HOA was the winner!  Second and third prize went to a husband and wife. He is also on the HOA board.

However, I will say the winner was an excellent entry, a sweet and smokey chili. The other two were white chicken and vegetarian. I did overhear someone (who was taking his judging very seriously), say the carne was a "solid" choice. I took that as a moral victory!

chuck burnt ends and chicken quarters.  I note this as chicken quarters were from Freddys/ Krogers.  You can feed 13 with leftovers for 13 at around $20 tops.  Legs, wings, breasts, thighs all more expensive. 

I did what I'd call a reverse sear. Chicken done with pellets until juices running clear (165 plus).  Then char on the gasser for 10 mins, then throw on a big platter and sauce.  I'll ask if anyone got a finished picture. 

This is the first year in a while we didn't buy fireworks.  After the BBQ our guests wanted to get home safely, we moved to the front yard and watched the show as the neighborhood went crazy!

PS JD, we did a few for-fun comps at Church a few years back.  Certainly a popularity contest.  Our own priest liked our tri tip best, but I guess we don't attend mass enough, we got third.
