Chipotle bowls with cauliflower rice

I have been working on a healthier diet for the past couple months, losing much of the weight that I gained over the Covid time period.

I am down over 20 pounds since about June, hitting my initial goal weight this morning. Now I will lower it another 5 to 10 pounds.

One of our latest items to be incorporated into our diet is cauliflower rice. For the past couple of days we have been making imitation Chipotle bowls using cauliflower rice.

The cauliflower is easy to make in a Cuisinart. You just load it up with florets and pulse it for a few seconds and you have nice rice size pieces.

We mixed this with marinated pork and chicken, black beans, salsa fresca, cheese, romaine, cilantro and lime juice. We added diced onion and red bell peppers to the pork.

The bowls turned out great. We have already done two meals with the pork and one with chicken. We will finish the chicken tomorrow night.

It took a couple of tries to learn the trick to cooking the cauliflower rice. I decide that fresh was best. You have to cook it hot in a thin layer so it does not steam. It cooks quick. You want to keep it firm and not mushy.

I found that this is more difficult to do with frozen since it has a lot of water in it.

Being a big rice fan from Louisianna, I'll surely give this a try. I'm not sure that it will work with red beans and rice but I'll give it a try. Thanks for posting.

I actually did a quick breakfast using black beans and rice. It worked fine. I have been planning to do red beans and rice.
