Santa is on his way
« on: December 09, 2024, 09:38:20 AM »

Well Thanksgiving is over so now it is time to begin planning our Christmas dinners.  I for one not sure what we will have.

We’re getting close to deciding.  Linda wants prime rib.  We have two in the freezer but they’re from her brother’s feedlot and are rather low quality.  I don’t want to serve one of them to guests.  The discussion continues.

I am pretty sure that I'll be doing prime rib this year.

There are just the two of us. Bent is going to RD in a few days and will be looking at ribeye steaks -- or maybe a bone-in ribeye roast that can have the ribs cut off for beef ribs and then some steaks cut.  Baked potato with butter and sour cream, candied carrots -- and I am happy!!!

My son and I were discussing Christmas dinner.  He would like a less traditional Christmas dinner.  One bird that came up was the goose.  Show wondering if anyone will be cooking a goose this year for Christmas.

Did that one year (not for Christmas, just for the experience).  Used Gordon Ramsay's recipe.  It was a very expensive bird with very little meat so per pound price was really high and we weren't that wowed.  If you go this route, I would love to see what you do with it.  And goose was a very traditional dinner for Christmas in Victorian England.

I bought 5 dozen homemade tamales from a lady and her Mother, I have known the ladies son for a few years and tried them several times and they are outstanding. $25.00 a dozen. Now to convince my wife👀👀.
Red and green but even though they say the green are mild, they are pretty dang zippy.

Eating tamales after midnight Mass was a huge tradition in the Mexican community in L.A.  Thousands and thousands were sold in the days leading up to Dec 24

Probably 25+ years since I have made goose for Christmas. About the only thing I can remember is I did them in the oven in a pan with a rack. They were just store bought geese, I have not seen them in a while in the stores. I did mention about getting  few ducks and doing them, that did not go well here.

Man this exercise reminds me how much I hate plastic wrap.
3 dozen wrapped and 1 more to go.
1 of them is 2/3 consumed.
They are outstanding but they said the green were “mild”, uh? Boy I wouldn’t want to try medium! 🚀

Rib roast for us again this year.
Even better are the cheese steaks we make from the left overs.
