DK: Yes, stainless left uncleaned will discolour. High heat will turn it a yellowish colour..The oily/sooty smoke will condense onto the metal causing staining and if not kept clean will bake onto the surface making future cleaning more of a chore.
The Traeger rain cap on my Lil Tex had to be cleaned often to keep it shiny - that is the top side.
