St Louis Ribs
« on: October 16, 2017, 11:12:36 PM »

I picked up 2 slabs of St Louis spare ribs at Costco.  They were already seasoned but I added mustard and additional seasoning.

I smoked them without foil for 3 hours @ 240.  Then foiled with apple juice for 2 hours.  I removed the foil, sauced and smoked for another 30 minutes.

Lumberjack sweet wood blend mixed with hickory.

They turned out great.  I usually smoke baby backs but I'm starting to like spares better.

When you foiled did you just us apple juice?  Did you add anything else?  They look great!

A few questions for ya:
What were they originally seasoned with?
What rub did you add?
What was the outside temp?
What type of smoker?

Costco sells two packs of these ribs pre-seasoned.  I'm not exactly sure what the seasoning is but it's a little on the sweet side.  I just supplemented it with some salt, chili powder, garlic powder and black pepper.
I think it was about 50F out?

Thanks. Seems like it was a simple cook. I wonder if Sam's has any similar ribs like those? Again, great cook!

I have never seen St. Louis style ribs at Sam's.  At Costco I buy the three packs that are unseasoned.

I smoked two more of the same Costco spares today. The outside temp was 4.

I basically followed the same cooking procedure and they turned out great again. Could have used a bit more smoke though.

100% Hickory Lumberjack pellets this time.

I've seen those at Costco, but never paid much attention, since I assumed they were precooked as well.

They are just pre-seasoned. I like them because it’s only two racks instead of 3. Two is plenty for my family.
