I too picked up some these at Costco since they were on sale.  These things are just too lean.  I tried an apple cider brining recipe on the web to prepare them and it didn't help much.  They were still too dry.

Most pork if not all sold in large grocery stores and or box stores are factory raised.  Why because they can be brought to market quicker then farm raised pork thus there is more profit as they can be sold at a cheaper price.  I would recommend if you can find a good butcher and/or local farm that raises pigs.  You will find that there pork is not as lean and has more taste.  Just my opinion

As were mine.  The remaining four will be seared in a pan then baked in the oven in a bath of cream of mushroom soup.  We'll see how that goes.

Sometimes, I will smoke them until they hit 140° and then through them in a pan on the stove with cans of diced tomatoes, mushrooms, onions, and bell peppers and simmer until they fall apart.  My wife loves it over rice.

That sounds WAAAY better than my idea.  Will give it a try.
