Only time I buy those is to make the Pork Loin Sandwich!
I tried an apple cider brining recipe on the web to prepare them and it didn't help much. They were still too dry.
Sometimes, I will smoke them until they hit 140° and then through them in a pan on the stove with cans of diced tomatoes, mushrooms, onions, and bell peppers and simmer until they fall apart. My wife loves it over rice.
Those looked great.I made some long time ago.
