What Would You Have on a St Patrick's Day Party Menu?
« on: January 27, 2018, 03:15:08 PM »

I am having friends and family over for St Pat's day and NCAA basketball tourney party this year.  Looking for thoughts on menu suggestions.  I will probably have 60-80 people in and out throughout the day.  I had similar parties the last two years in our new home for New Year's Day.  I had too much going on to repeat that this year so I decided St Pats and the tourney would be a good excuse to have a party.

BTW, I do not like corned beef but may entertain that as a menu item if I can determine a method I am OK using to make it (probably reheat a store bought one or so).

I typically have 2 large steam tables and a large roasting pan at a minimum going to keep food warm all day long.  I leave tables in the garage setup buffet style for folks to graze all day at their leisure.

Thanks in advance for your thoughts.

Maybe something that would do well in the buffet environment that would be easy to keep warm without over-cooking, like shepard's pie, Irish stew, or Dublin Coddle. Be sure to have lots of bread handy to soak up all the broths!

No, but plenty of beer (Guiness, Harp, Smithwicks) and probably some Irish Whiskeys, Bailey's, etc - but there could be green jello shots.

Potato soup or something like that.  A small bowl of that soup will fill the masses and they won't eat all the other things so fast.

Brisket, chicken wings, pulled pork, Mac and cheese, cole slaw.

I don’t have a shred of Irish in me, but everyone likes good food.

May be a bit stereotypical linking the Irish and potatoes, but I will throw it out there anyway:  a baked potato bar.  Have a big pan of baked potatoes and then all sorts of toppings -- butter, sour cream, shredded cheese, chives, bacon, broccoli in cheese sauce, chili.  You are limited only by your imagination!

Barley soup would make more sense than corned beef and green beer!  My Irish friends are frequently confused by the things we do in their name.   ;)

Tentative final cook for ~60 people attending.  I know this will be too much food, but that is how we do things.  We error on the extreme side of never running out of food or booze.  I am cooking most of it this weekend as I travel next week, and don't want to be messing with it when I get home.  I will make the wings the morning of the party.

2 half pans of bacon, smoked gouda mac n cheese ~15#
2# box shell pasta mixed with fried cabbage, onions and garlic
21# pork shoulder
Corned beef and cabbage (don't know how much as my wife is handling this)
35 sausage links (~ 7#) with peppers and onions
20# chicken wings
6# sliced chicken breasts marinated in Lawrys caribbean jerk
16# chuck roast for pepper stout pulled beef

tons of dips, appetizers, desserts that others are bringing

And we will be watching every televised NCAA basketball tournament game...

I'll have sausage with peppers and onions, a few wings, and a scoop of Mac.

Sausage 7#
chicken breasts sliced up #6 - this is the first time we have sliced and then smoked...curious to see how much more smoke penetration there will be...I am sure the marinade penetration will be greater

Still lots of room on the Elite.  I may give the MAK a workout tomorrow with the pork shoulder and chuck roasts

The they could both be lots of different flavors...but for peppers and onions I am thinking traditional.  Reddish is Sweet Italian, the brown, not even sure what to guess?
