We just have a dinky little Traeger Jr. Elite.
But it does what I want it to.
Little but mighty cooks some good stuff.

At one point I had 3 Pits, first was a Traeger LiL Tex (Which I've since sold) Then a GMG JB And when they came out with the DC Tailgator I bought one. Still performs flawlessly to this day & has been problem free. The DC is one do all sweet LiL cooker!!

I have a lot of stuff non pellet

I love my Cookshack Smokette electric smoker.
also have a 48"SS Cabelas gasser. used mostly for hanging sausages and stuff.
Still have my old Brinkman barrel that I think I paid 20 bucks for new if that, unmodified and have used it a lot until I got the electric.
I saw a Southern Pride DH 65 used at a butcher shop once and thought I need one those. A few years later I saw one in and auction I put a bid in not thinking I would win bit I did.  It is a nice piece to use but I rarely use it and should sell it to someone that would.

For pellets my first a Rec Tec have had it for maybe 4 years used it a fair amount but I never liked it as much as the hype made me think I would.
Last year I bought a GMG Davey Crockett and love that little cooker even though it didn't work right out of the box.

I see someone above has  270 smoker I looked at one of them and think I would like to have one of them.

These use an electric element to create the heat in the chamber of the unit, but also burn some type of hardwood derivative?  And please don't think I am trying to steer you down a course.

But if my above assumption is correct, could pellets be put in where the wood normally is, or does it have to be some type of chip/shaving?

I love my Cookshack Smokette electric smoker.

Another proud owner of a Cookshack / Fast Eddy PG 500, it's nice to be able to get back to grilling again after so many years of just low and slow techniques the versatility of this unit is amazing!

One could put pellets in the box over the element. I have not tried that, I have used a pellet tube in it to do cheese.
I have many different cookers and use them all for certain things most of the time. The Pellet cookers and the gas grill get the most use anymore. I will sometimes finish on the gas grill.

What form of wood is used in a unit like that? e.g. chips, shavings, chunks...

I used to have a smokette too.  I ruined it by using too much wood and had a terrible creosote on all my food.  You could put any form of wood that would fit.  I used to buy apple wood strips about 2x-3x the thickness of a paint stirrer from some place online.  I would use chunks, chips, and shavings too.  Don't think I ever used pellets as I quit using it when I got into pellet grills. Never used saw dust in it either.
