Questioning Taco Spice

What spice do you put on the pulled pork that you use for tacos?

How about for pulled chicken tacos?

I use  Bad Byron's Butt Rub for pork, and John Henry's Texas Chicken Tickler for the chicken (cubed, not pulled). Both make their respective meats savory, and I'll use homemade salsa and some kind of spicy sauce to heat up the tacos.

So you don't use what I think of as taco seasoning?  You use additional portions of the pork or chicken rub you used when you smoked the meat?

Correct - I tend to be a bit light on the initial rub when smoking, and adding a bit more when pulled or cubed makes it better (to me at least).  Some of our guests like El Mexicano adobo seasoning, but I personally prefer to add heat and spice with sauce.

The adobo seasoning doesn't have any special ingredients, but includes these: salt, chili pepper, onion, cumin, garlic, black pepper, lemon, sugar, beef base, and paprika. However, it is convenient to use.

I use package of McCormicks low sodium taco seasoning for three pounds of chicken breast.  And I found if I smoke the chicken at 150 in the GMG DB for an hour or so before going in the slow cooker it makes them an even bigger hit.

That's it.  Three ingredients and mesquite pellets.  I use the low sodium MILD seasoning, but it tastes the same as the original to me.  Warm some tortillas and serve with pico de gallo or whatever y'all like with chicken tacos.  So easy even I can do it.  :beer:

Enough chicken broth to just cover the meat.  Usually around 3 cups.  I use the HEB box of low sodium chicken broth and put around a cup in a measuring cup and dump the seasoning in and let it dissolve some.  Add two more cups of broth and mix it with a fork and pour on top of the 3 lbs of smoked breasts.  If it's not enough, add some more broth to just cover the meat.  If it's too much no harm will be done.  It'll just be juicier.  My daughter prefers it really juicy. 

I do 5 hours on high.  Four hours on high and 2 on low works, too.  Eight on low would probably work, too, but I've never done that.  Just depends on how much time you have.  I wait until it shreds easily, but 5 on high is just about perfect.

I got the original recipe off of www.food.com and it was by Pamela.  I hope that gives her the credit she deserves.  She must have a tiny slow cooker.  She uses 3 Tbls of bulk seasoning, 1 cup of broth and 1 lb of boneless skinless chicken breast and cooks on low 6-8 hours.  I modified it to fit our house and it doesn't last long.  :lick:

I do 5 hours on high. 

Not to throw water on this fire, but it's been my experience that any time I cook chicken breast over about 150° it tends to dry out and lose flavor. When I do chicken Taco's, I smoke the breast for an hour or so on low to an IT of 100-110°, I then sous vide at 140-145° for another hour or so. I shread/chop the chicken and add the other ingredients along with the juice from the sous vide bag. I keep the chicken mixture warm but always below 150°. I always use this method with chicken breast or shrimp that are used in Curries, Alfredo's and even Junbalyia.  You'll be amazed at the difference in flavor.  :2cents:

Do you ever shred it and pan fry it for the tacos?  Add some cumino and lime juice before adding to taco?

What spice do you put on the pulled pork that you use for tacos?

Deep fried cod is hard not to like...
