This sounds like one that I'm looking for.
Let me see if I follow you–
- You smoke 3 lbs. of chicken breast at 150° for an hour or so
- Then you put it into a slow cooker with a package of McCormicks low sodium taco seasoning
Anything else in the slow cooker with the breast meat? What slow cooker setting do you use? For how long?
That's it. Three ingredients and mesquite pellets. I use the low sodium MILD seasoning, but it tastes the same as the original to me. Warm some tortillas and serve with pico de gallo or whatever y'all like with chicken tacos. So easy even I can do it.
Enough chicken broth to just cover the meat. Usually around 3 cups. I use the HEB box of low sodium chicken broth and put around a cup in a measuring cup and dump the seasoning in and let it dissolve some. Add two more cups of broth and mix it with a fork and pour on top of the 3 lbs of smoked breasts. If it's not enough, add some more broth to just cover the meat. If it's too much no harm will be done. It'll just be juicier. My daughter prefers it really juicy.
I do 5 hours on high. Four hours on high and 2 on low works, too. Eight on low would probably work, too, but I've never done that. Just depends on how much time you have. I wait until it shreds easily, but 5 on high is just about perfect.

www.food.com and it was by Pamela. I hope that gives her the credit she deserves. She must have a tiny slow cooker. She uses 3 Tbls of bulk seasoning, 1 cup of broth and 1 lb of boneless skinless chicken breast and cooks on low 6-8 hours. I modified it to fit our house and it doesn't last long.
