I absolutely love crispy chicken skin, Gwennie thinks I am disgusting.
Anyway I am going to try a CLT, baked crispy chicken skin, homegrown tomatoes and our dry cured bacon and of course, lettuce.
Not sure how it'll work but it dang sure sounds good to me.
If it works out I'll post a few pics.
Doing some flat iron jerky so may be pushed for time.

Here is the start of some of it.
As well as a done photo.
Honestly we have used all cuts of beef for jerky, prime cuts are amazing but flat iron etc. is right there with it.
On the other one Gwen made me a 3 berry cobbler, we have some leftover Hawaiian ice cream that we made yesterday.

Not sure how they are baked, but I've deep fried chicken skins along with with pork rind, and they are really good. Ate them as a snack - never thought about putting on a sandwich, but sure they would have been great on that.

I would think a seasoned, deep fried chicken thigh would be pretty good in a sandwich like that.  I would want it really fried though, like a board!

8 thighs, skin off and in the fridge to chill.
350 and 5 minutes then a flip. Most definitely something to watch but the 5 that survived are a cardiovascular extravaganza, man the taste is fantastic, assuming that you like skin.
Move over pork rinds.

I just don’t do burnt but honestly, the other 5 are superb. 1st for us also, if I have my way I’ll do it again. She is NOT onboard with this, at all.
While I was doing this she made us a breakfast boat, sausage, onions, eggs and cheese.
Making the best of our Monday that we will face in about 7 hours.
