Are you specifically looking for something to be cooked on your pit?  Do you want them to be hot/warm or can they be cold?  (Lots of things can be made with cold smoked salmon).

Warm would be fine.
Thinking something on the smoker maybe. Then keep warm to take to my brothers for Mom's 80 B-Day

I just added a recipe for Jalapeno Rangoons that you might want to look at.

Stuffed potato skins -- all sorts of goodies can be added, cheese, sour cream, bacon, chives.

Bacon candy

Jalapeno poppers (like the Rangoons, but a bit simpler)

Devil's on Horseback

Rumaki

Fruit rumaki using pineapple instead of liver

+1 I made those for a Christmas party a couple of years ago, they were a big hit. The only problem was they went fast.
