Brining -- Poll No. 1
« on: August 24, 2017, 07:14:19 AM »

Bentley is good about brining a lot of things.  I usually only think about it for chicken.  What about you all?  And if you select "other", what else are you brine (I might learn something!)

I will wet brine chicken and turkey, but prefer to dry brine pork. I dry brine all my pork shoulders and loins with kosher salt.

It would help me if you would go over to Here's How I... and give us a lesson on dry brining.  Please... :help:

Shouldn't there be a "Don't Brine" category?

Been wet brining chicken/turkey for many years but started dry brining beef and pork in the last year or so.
