Prime Tri-Tip at Costco

Just a heads up...
Haven't seen them for a few months, but just picked up a few packs of USDA Prime Tri-tips from Costco for $7.99/lb. I've seen them for less, but not a bad price. This was Bay Area Costco, not sure if others have em now too.

Packs of 2 are around 4lbs - so 2lbs each.

That is great. My local butcher has a hard time getting them over one and a half pounds. Most of them being a pound or less.

The only ones that I can get are at Sam's package in a peppercorn marinade and they are in the 4-6# range.

Smoke for a few hours until meat temp get to 100°-120°.  Cool in fridge or freezer.  Vac seal.  Sous vide at 135° for 6 hours.  Pull.  Rest 15 minutes. Slice.  If I'm not in a hurry, I cool in fridge and slice within a day or so and then vac seal into portions and freeze.

Santa Maria seasoning, smoke to about 120, and then sear until IT around 132.

So sore from wood splinting, no Memphis Pro tonight.  Getting ready to put a Restaurant Depot Choice 2lber under the broiler for about 5 minutes a side, then cook to 135° at 350°!  Believe it or not, it will taste pretty good!

The next tri-Tip that I do, I'll do like Bar-B-Lew except sous vide at 132° for a much longer time. I won't give it the full brisket treatment but will cook for at least 22-26 hours. I know that cutting it thin across grain makes it very eatable at 4-6 hours but it's still a bit chewy.

I did a tri-tip tonight.  Below is how I did this one, and it is typically my go to method.  Always comes out great.  This one was no exception.

First I start with a 30 minute Salt brine.  This I only recently started doing because I saw it on "How to BBQ rite" (I am not sure it has made much of a difference).

Then I rinse the salt off, dry the meet then season it with Garlic Powder, Onion Powder, Stubb's Beef spice, and usually McCormick's steak seasoning, but I tried Stubb's Steak Seasoning tonight.

On the Davy Crockett at 200-220 until an internal temp of 115 is reached.

After that I sear it in a cast iron skillet with olive oil until an internal temp of 125.  Then it rests for ten minutes and gets sliced.  I did this one with the fat cap on.  It was the first time I did that.  We really liked it.

That looks really good. We very rarely see tri tip around here and not sure why. Might be worth a trip to Sams for a look.

In the last year or so tri tip has become a household favorite. I'm glad because it is reasonably priced and I think as good as most any other cut of meat. Seems to cook very consistent compared to other things like brisket that for me can be finicky.

Season with Cattlemen's Grill California Tri Tip seasoning or whatever I may grab.

On the smoker at 180º until internal temp of 115º

Then sear over open flame on the Yoder to 125º

Rest for 10 minutes covered with foil.

I was at Costco yesterday and could not resist, picked up two nice looking choice Tri-Tips. They had prime at $7.99/lb. but to tell the truth, these choice ones looked better, less marbling but overall better. Note that the label indicates that they are "Blade Tenderized" and should be cooked to 160°. If the surface has bacteria present, blade tenderizing will push them to the center and rare/medium rare temperatures will not normally kill them (Good reason to sous vide). As I stated above, these are going to be sous vide at 132° for 24 hours to see if they are less chewy.
