Which one did Bent have available for his steak?

Steak Formula. He used that on his 11th place Brisket at the 2010 Royal.

Steaks getting to room temp for about 1.5 hours.

After 90 second sear both sides in a cast iron pan.

Put them in my Pro already pre-heated at 400 for 11 minutes.

After the steaks were in I sauted’ some mushrooms in same pan I seared the steaks

Good method Bentley!! Pan sear then 400 in the oven (or pellet grill) for 11 minutes.

Well, Mr. ZCZ has been harping at me for years about WeeWilly's seasoning.
I guess I'll have to give it a try and add a jar to my overstocked shelf of seasonings.
But, haven't located a place as yet to order it from.

This afternoons seasoning for the ribeyes will be Dizzy Pig - Cow Lick Steak Rub.
