How to cook Walleye
« on: June 06, 2019, 10:57:04 PM »

Anyone have a good way to cook Walleye? Went fishing today and its the first time I have caught a Walleye (6) so just want to make sure to cook it so it tastes good.

Walleye is extremely popular because it's almost tasteless, just like Cod.  Dip it in whipped egg and then in crushed corn flakes.  Fry it in bacon grease.

I have not found Walleye in my local market. If I were cooking it, I would go the healthier route.

Here is a recipe from a health oriented site. This is similar to the way I grill white fish, except I skip the butter.

I do a fish fry about once a week.

Canada shore lunch style.   Fillets dusted in flour seasoned with salt and pepper, and then pan fried in oil (or bacon grease).    Served with sliced onion and rye bread and butter.   Perfect.

Serve it with raw-fried potatoes (more bacon grease) and vinegary green beans (with diced bacon).

Is there any other way?
I grew up on potatoes fried in the rendered bacon grease. It's the best.
I have a jar of duck fat in the frig that does a close second.

I didn't know that walleye was almost tasteless. I'm certainly not mush of a fish fan but always thought walleye was pretty good.

You're not much of a fish fan but thought that walleye was pretty good.  Yeah, because there's no fish taste.

"fish taste".

IMO, what most folks refer to as "fish taste" results from the fish either being too old, previously frozen or over cooked. I'm very picky about the fish that I eat, but I've never eaten properly prepared fresh fish that tasted "fishy". White meat fish (halibut, cod, etc.) have a milder flavor than darker meat fish (salmon, sword, etc.), that have a more distinctive flavor, but all can be very good if properly prepared.  :2cents:

They are a lot like Perch.  Actually they are a cross between Perch and Pike. Also known as Pickerel...If you have cooked Perch and liked it, do the Walleye the same.

Exactly! I guess I lean towards the very mild tasting fish.
I also like Lake Michigan yellow perch and also enjoy bluegill and some other freshwater sunfish.
Hey, I guess I'm a mild sorta guy.

I like Shore Lunch and pan fried in peanut oil for Walleye and Northern Pike.

Shore lunch in Saskatchewan, at "Haley's Camps"  best I ever had.  Walleyes caught in AM then flour and cornmeal coating then into the hot oil,  and eaten with fried potatoes, cold beer and and some sort of bread.  (French is best). Then rest a bit and go back out for Northerns or Small Mouth.  (catch and release).  Sweet fresh walleye is one of the best crappie, bream, catfish are right up there also. If fish smell "fishy" then they are not fresh.
