IMO, what most folks refer to as "fish taste" results from the fish either being too old, previously frozen or over cooked. I'm very picky about the fish that I eat, but I've never eaten
properly prepared fresh fish that tasted "fishy". White meat fish (halibut, cod, etc.) have a milder flavor than darker meat fish (salmon, sword, etc.), that have a more distinctive flavor, but all can be very good if properly prepared.
