Memphis Pie.

550° for 6 minutes.  OO, 62% hydration, 48 hours in fridge.  EVOO & minced garlic sauce, green peppers and onion.  I found out a pizza without meat is a waste of time.  But the texture was outstanding!

I have a GMG pizza oven on back order. I am looking forward to making wood fire pizza my way: thin crust, green peppers, onions and tomatoes. No meat !!!!

Would have been great.  If I had it, it would have been on it!

You could have thrown some thin sliced dry salami on there and popped it back in for 30 or 40 seconds.


Yes, I do pizza directly on the grates.

Looks like you put it directly on the grates with no stone?
