A fried of mine recently prepared a bison tenderloin and I loved it. He said the bison ribeye is his favorite but I've never seen one.
It's been several years since I had a bison burger but my first one was in Boulder, CO when I was in college (see my avatar
).
Side note: Ralphie is actually the name of the University of Colorado buffalo that runs on the field at the start of the football games. For more than 25 years, each Ralphie has been donated to the school by Ted Turner from his Montana ranch. After their turn as Ralphie (7-10 years), they retire and live their remaining years grazing on a Colorado ranch. Speaking of Ted Turner...a chain called Ted's Montana Grill has great bison burgers.
Fun fact: Ralphie is always a female. This is due to size and temperament, but not speed. The females are just as fast!
Also, the names buffalo and bison are interchangeable.
