Which Mexican Shrimp Appetizer do you prefer?

Mexican shrimp bites, basically shrimp in olive oil, chili powder and guacamole on a potato chip with a bit of chopped cilantro on top.

Mexican shrimp appetizer ideas.

We got invited to a get together with a Mexican theme. A while back we made citrus marinated chicken pinwheels, they were a huge hit. Can’t find the thread....oh well. Anyway the other people want them again but we hate to repeat something. We want to try something very similar using shrimp.
Found 2 recipes that look pretty dang good.
1. Mexican shrimp bites, basically shrimp in olive oil, chili powder and guacamole on a potato chip with a bit of chopped cilantro on top.
Or
2. Mexican garlic shrimp, basically shrimp in butter, olive oil, onion, garlic, parsley, lime juice, cumin, paprika and salt and pepper to taste. This is a dip style recipe.
I would like to have input on what sounds good.
I wanted to do a poll but here we are, just questions.

#1 but a potato chip may get soggy, you might try corn chips.

Exactly our thoughts but the recipe calls for them and I think it is a load and go? We were leaning corn chips or tortilla chips.

Sorry, I always think of tortilla chips as corn chips. I meant tortilla chips.

Am I correct in assuming that both recipes will have the shrimp finely chopped finish?

Another option maybe?  This is from BonAppetit

Shrimp in Achiote Oil
Yield: 4 servings

Ingredients:
Achiote oil
•   Â¼ cup peanut or vegetable oil
•   2 tablespoons Achiote (annatto) seeds
Shrimp
•   2 tablespoons unsalted butter
•   1–2 Thai chiles, with seeds, thinly sliced
•   4 garlic cloves, finely chopped
•   2 tablespoons fresh calamansi or lime juice (see note)
•   1 tablespoon reduced-sodium soy sauce
•   1¼ pounds large shrimp, peeled, deveined
•   Kosher salt and freshly ground black pepper
•   2 scallions, thinly sliced
•   Toasted country-style bread, for serving

Preparation:

1.   Achiote oil: Cook oil and Achiote seeds in a small saucepan over med-low heat until oil turns dark red, about 5 minutes.  Strain into a jar and let cool.
2.   Shrimp: Heat Achiote oil and butter in a large skillet over medium heat.  Add chiles, garlic, calamanco juice, and soy sauce and cook, stirring, until fragrant, about 30 seconds.  Add shrimp, season with salt and pepper, and cook, tossing often, until shrimp are opaque throughout, about 4 minutes.
3.   Top with scallions and serve with bread.
Note: Achiote oil can be made 1 week ahead. Cover and chill

Well the timing was an issue trying to serve the original idea warm, so we switched it up and came up with a cold shrimp, avocado dip. Smells good enough. Shrimp-avocados-onions-cilantro-english cukes-tomato-lime juice-cumin and salt/pepper. Grab a tortilla chip and get after it. The way this crowd rolls, gonna need a few libations also.
