Have Venison, need recipes.

Have a Bow Hunter we are allowing down in the woods to hunt.  To day I was presented some meat.  I have not even checked it.  I know he mentioned tenderloin.  All I recall ask for meat I could use to make sausage with, as both on here and Pelletheads I heard folks speak of it and it seemed enjoyable, so I would like to try it. 

I think there are still a few folks on here who know venison and I ask you to guide me on this.  I will try and get some picture of what I was given and see if I can be guided on how to cook it and what taste profiles might work for me.  Also, I really would like some TRIED & TRUE sausage recipes.  I know I can go to the internet, but I prefer recipes that have been proven.  I have the pork to add to the venison, I just need a spice list.

So I ask for help.

unfortunately I have not cooked venison in a long while so U=I can't be much of a help.  What ie remember was cooking it in  skillet and making a pan sauce with cherrie

I know the hind quarter is great for jerky

We have Tenderloin, which I am going to treat as the Gold Standard.  Rump & Loin I think, which after seeing Lew's comment will go towards sausage and jerky and whatever anyone else suggests. 

As far as sausage goes, am am up for package like LEM or Backwoods if anyone has any suggestions like that.  I am trying to give direction on what I like in a sausage...I guess if I had to pick one, I would say a sage/red pepper flake breakfast sausage would be my favorite.  I doubt that helps, but maybe it gives the deer sausage guys a way to direct me to some mixes!

Looks like they trimmed most of the silverskin off of that meat already which is great because that stuff is a pain to trim.

I like to cut into small steaks. Then take some flower and season with salt and pepper. Cote the steaks and brown both sides in pan with hot oil. Remove steaks and Make some white gravy with drippings and place steaks back into gravy to simme Turning several times. Make some mashed potatoes to go with it and enjoy.

The tenderloin in my book is better than beef. Grill it like a steak at 500 or so on your Pro. But do not undercook and do not overcook. Should be no pink in the middle. A friend would marinate in olive oil and a few other things but can’t remember what else.
Do not make sausage out of the tenderloin.

The tenderloin is commonly called the backstrap.  Grill it.

The rump steak is, I guess, the round steak.  Make it into Swiss steak.  Serve it with mashed potatoes.

That it does!  I smoked some yesterday.  My neighbor was given a whole deer quartered out and he gave me one of the hindquarters.  Haven't tried it yet.  I hope it's not gamey tasting.  It was off a big 10 point. 

His buddy who gave it to him only wanted the horns.  I never have gotten horns to taste good.

So do you treat it spice or marinade wise just like beef for jerky?  I think I am going to try a breakfast sausage with the 1st 3 lbs of rump.

Yes, you prep the venison jerky the same way you would beef.

Try this.  My buddy found a recipe similar to this somewhere.  We make some of this every time we make jerky.

Brine for 4# of meat
1/4 cup Worcestershire
1/4 cup Dale's Steak Seasoning liquid
1/4 cup Low Sodium Soy Sauce
1/4 cup BBQ Sauce or Hot Sauce
1 tbsp. Molasses
1 tsp. Liquid Smoke
2 tbsp. Dark Brown Sugar
1 tbsp. Black Pepper
2 tsp. Chili Powder
2 tsp. Garlic Powder
2 tsp. Onion Powder
2 tsp. Seasoned Salt
1 tsp. Ground Ginger
1 tsp. Smoked Paprika
1/2 tsp. Cayenne Pepper

Gotta say, venison or elk makes terrific jerky. It is just really good. Backstrap steaks are good also. Just much prefer jerky.
