Has anyone cured Spare or St. Loius ribs, like they would cure Bacon.
I may have to see if I can find a rack and give it a try, just wondering if anyone here has done it and did you get the bacony flavor or just ham with a handle.

Some alternate options.
1. Put bacon powder in your rub.
2. Cowtown has some rubs that I have used on ribs in the past and they came out with a ham flavor.

I have tried it and did not care for it much. It seemed to completely take over the pork flavor I love with a hammy taste.
