Pork Loin
« on: January 24, 2021, 02:39:54 PM »

Bentley got me thinking about pork loins with his post the other day, so...
I took a couple pork loins out of freezer.
This one should be done around dinner time.
The other will be made into pork sausage (tomorrow hopefully).

I pulled a vac seal pack of pork loin and pork shoulder out of the freezer yesterday to thaw in the fridge.  I made them sometime this summer.  Going to make cuban sandwich tonight or tomorrow.

Might that be a tenderloin?

No, just a loin.  All trussed up under the bacon.
Came out a bit dry, was overcooked.
The battery in my Thermoworks Smoke took a fine time to die, so I didn't know when it was done.
