Need Pork Belly Advice

I bought a nice looking pork belly from the Asian market that is vac sealed and frozen. 

It is skinless and pre-sliced into thick slices...approximately 1/4 inch...maybe a hair thicker.

The belly is roughly 9”x9” and is raw, not cured, not smoked.

Any suggestions on what to do with these slices?

Since it's sliced so thin, just season, throw it on the pit and cook it like thick bacon.

Bacon Bites!

Season them with you favorite rub
Cook until 200 degrees
Sauce them with your favorite BBQ sauce
Chop into chunks

Oh yeah, I forgot about them. Very tasty.
Don't know if that will work for Ralphie as his belly is sliced already.
Smaller pieces maybe.

It is not bacon, it is sliced pork belly.  There is a big difference, why I said grind it!

I have made Bacon Bites with slabs of bacon and uncured pork belly. Either way it is  :lick:. Call it whatever you like.

i would cure it, probably could be a 24 hour cure, i would do 2 days. then make pig candy with it. or breakfast with some eggs and good rye toast.

Thanks for the suggestions. Leaning towards doing those bacon bites for half and the Chinese twice cooked style...maybe making banh mi sandwiches with that half.

Here is pic of it. The slices are about 1.5 pencils thick.

You go to a Korean BBQ and they slice it in pieces and you cook it on the table grill.
