Lets see my math is not good...About the most heat I like and still enjoy the taste of the food is Jalapeño and it is about 3500, so that is 10 times that?  Yeah, that will go in Christmas Oil gifts!

I guarantee you if I had a dehydrator I would not be using the pit.  I have eaten the dried red ones and they taste different then say eating a fresh one in a salad, but not sure I would call it a "smoky" difference!

I do not know what IOW means...just an FYI.

If you have a Cabela's near you, they usually have them on sale around the holidays.  You can probably pick up a 10 tray one for $100-$120 on sale.

I think a cayenne is about that hot and that is what is used in most base hot sauces before you start getting into habanero, ghost, scorpion, reaper, etc.

Create your own crushed red peppers by drying and then running thru a coffee or spice grinder.  Probably only need to pulse a few times to get the size used on pizza.

I have a lot of that still from last year.  We will be cutting way back on the planting next year...2 plants will be plenty!

Just do it outside and let the grinder sit for a long time before taking the top off.  My brother basically pepper sprayed himself and learned the hard way.  It didn't last as long as the real thing but he said it wasn't pleasant.

To be more specific with my answer to your question, I do believe there is a difference in flavor.  Whether it is a smoke flavor (I guess it would have to be) I am not sure, not sure I would even know a smoke flavor anymore.  Do I believe this will enhance the flavor of something these Chili's are used in?  I do not, it is just a way for me to get them quickly dried.  Not 2 to 3 months like it takes if you just air dry them in the Fall & Winter!

Once you've made the end product, I'll be curious as to how much smoke flavor is being added.

IOW how much difference from just using a dehydrator can you taste.

If I recall correctly, didn't you have some mold issues with the air drying method in a prior year?

A little bit, but much less then I thought I would.  In fact, drying them in the aluminum pans last year, almost zero.

Not sure if you want to buy a dehydrator, but if so Excalibur has them on sale at 25% off.

Use coupon code HOLIDAY2021.

More expensive than the Cabela's, but they seem to get better ratings.

Thank you.  If we had fruit trees I think I would get one.  But the days of 6 & 8 pepper plants are over I hope.  There is just no need for so many.  I have all the dried ones you see in here, plus 4 full steam trays of them still drying, which I have no idea how they will be used.  And the last photos of the strung ones, I turned them into chili powder and have it in the cupboard!
