Corned beef packer --> pastrami

I have yet to try making corn beef from scratch, but until I work up the nerve, the corned beef packers at Cash and Carry are often inexpensive.



Using a Traeger with Pellet Pro PID.
The PID makes the cooker behave
marvelously
   I like to cook at around 225 to 250
degrees, and because I do not get much
smoke at that temperature, I'll
throw in a six-inch tube of pellets.
   

Sliced up some of the point about
a half inch thick, then cubed into
bite sized bits. Saving the flat for
thinly sliced pastrami for Reubens.
   My wife abaolutely loves these
rich, crisp, and savory bites. Now
whenever I do a corned beef packer,
she insists that I do the entire
point this way

I often make pastrami from corned beef,  however I've never seen a corned packer in my area.. just points or flats, and the points are often more expensive.

Restaurant Depot will have then by the cases starting at the end of Feb.  Usually they will have 3 grades usually from about $2.75 to $4.00/lb.

I have never seen the labeling or vac seal bags having USDA Grading on them.  The brand I by is the cheapest of the 3, and is something like Jomar or Dunphy, cant remember #3.  Is always good!  But I end up cooking it with steam, so it is always tender.

Thanks mowin, C&C is the only place I've seen the packers in my area, and this is the brand, but as Bentley said, there does not appear to be any kind of grading on the package


I have one trimmed and in the curing brine right now!

Having read that your wife likes the cubed point the way you showed it...What are her feelings on CB Hash?

I'm looking forward to trying from scratch one of these days.  She would love CB hash! Thanks for the idea  :clap:

I've made brisket hash, but not CB hash, which sounds like a winner.  However, she does like pastrami hash browns:



Boy! That's a special find ... A packer corned beef. Nice lookin, PZ. ..... Haven't had "Hash" since I was a kid, and it was always the canned stuff, but loved it with eggs anyway. .... Homemade has to be in a world of its own compared to the canned stuff.

Just made a run to Restaurant Depot near my office (Raleigh, NC...Cary technically).  They have corned beef packers in stock.  It's a  seasonal supply as Bentley mentioned. 
This location only had one type to choose from and they were $2.59/pound.  Not sure of grading...forgot to look before posting.

They ranged from 10.5 pounds to 21 pounds and everything in between.  I grabbed 2 beauties at approximately 12 pounds each.  They will go into the deep freezer today and await their pastrami destiny in May. 
I'll check back in with this thread for tips and advice.   

PZ, those crispy bites look really good.  I need to try that.

I think you'll like them Ralphie - I made the same this year again, and had two other couples over for St. Patrick's day - everyone loved them.

Just wanted to mention that my Restaurant Depot in Raleigh, NC is carrying whole packer corned beef briskets year round now. No longer just seasonal for St Paddy’s.
