Cooking Cabbage
« on: June 14, 2023, 12:21:03 PM »

We picked up a small 1/2 cabbage to cook along with something else.  I haven't done one in a long time.  Thinking cooking cut side up, slathered with butter(cut side) & perhaps some seasoning on top.

It would be placed in a snugly fitting foil boat to retain goodness & protect the bottom.. Pondering a 325º indirect cook.

Questions:  What to expect for cook time?

Any suggestions as to alternate cooking methods?

My preferred method is sautéed in a pan with butter until caramelized similar to onions.

We made sweet and sour German red cabbage a couple weeks ago and it needs 1-1/2 - 2 hours simmering on the kitchen stove at that temp.

rub the outside of it with butter also, be generous on the butter on the cut side. I have put steak seasoning on it also.

Whole I have done the same, just cut out the heart and butter and some beef bouillon cubes crushed or some powder in the hole jam a stick of butter in there also. Been a while since i have done any, again I am the only person that would eat it here. I used ham base one time and it was pretty good also.

Not sure how long it took, mine were probably done in the electric cookshack and  not pellet.

Browned with in the skillet or on the griddle with some onions is good also.

I make Halushki a times, and have fine sliced some and kind of steamed then added  in pasta sauce and meat for a spaghetti alternative.

And you can never go wrong with just cutting a chunk off and have it in one hand and the salt shaker in the other.

early in the Traeger days we had a BBQ cooking class in town.   One of the side dishes they did was BBQ Cabbage.  This consisted of a whole cabbage, cored, set on a foil ring/boat.  Filled with sausage and BBQ sauce.  Couple of hours at 225, cut up to serve, nice easy dish.

I steam mine and season it with corned beef, onions, carrots and potatoes.

I gave it a try, the 1/2 small cabbage as described above.  Cooked indirect @ 325º on my kamado for a few minutes short of 1 1/2 hrs, along with two potatoes (direct) that were done in the usual hour.

The cabbage was brushed with melted butter a few times after the initial heavy butter coating had melted in. Lastly, a thick coating of mayo was applied to the top cut side.

How was it? Well - Good taste & looks. Not cooked enough, almost raw... Had to press on as dinner time was approaching with a steak to be cooked @ 475º ish. Guessing it would have needed a good 30 min.

that is where the microwave or the instant pot would have came in handy to finish it off.

Good point Dave.  Should have done it.

Steve Raichlen did a recipe where you core out the top, make a foil donut and coat with butter.  Fill with a mix of onion and bacon.  It was quote delicious.  He used an indirect method on a charcoal grill.  Would probably work in any smoker. Its in his How To Grill book.
