What's for dinner?

Beef Tenderloin!  Will be, as Peter Campbell says...in the Pan with butter, asparagus and mashed potatoes!  We will see how Wee Willy's Steak Formula does on a real steak! 

Left cut is 7 1/2 oz. and the right is 11 oz.

I thought I had when I pulled it from oven and probed it!  Said 167°!  Luckily the photos will show a happy ending!

Hope you burn it.

90 second sear in butter on each side, this is before and after the 1st turn & before the oven.  was on counter top with seasoning for 45 minutes before cook, IT going into oven was 63°.

Set oven for 400°, put into oven when it was 230° (cuz I am lazy and wanted to eat my artichoke), and set timer for 11 minutes.  This is how it came out!  The big one is exactly 2 inches thick and 11.18 oz. for those that care about that stuff!

Poured pan drippings over my cut!  It has been several mounts since I had a filet mignon...2 things, these things get better tasting every time I cook one, and I have never been disappointed with a Tenderloin from Costco...USDA Choice!  No more Rib-eye for me!

Excellent on this cut!  Only thing I would do different is use more!

You go from probing it with temperature gauge and reading a number you think is well done to resting it and finding it is about as perfect a medium rare as you could expect.  I wish I was not so lazy as the Memphis Pro would have just enhanced it even more, but Spring is almost here, we are to be 71° On Friday!

Those look excellent and we agree on the steak switch, a tad less flavor some say but not enough that we are bothered by it.

Pretty much available in MN grocery stores, not sure how widespread it is. Perhaps you can ask your local store managers to carry it. On sale now at my local Cub Foods
