So the belly was frozen (18 degrees, according to the probe) when you put it in the smoker? Is it always done this way?

I would pull out the pan of water or you will have that going forever, and may be a challenge to dehydrate the jerky with the water in there.  If you can keep the pit in the 150°-170° range, it should be good for the jerky.  Not so sure about the pork belly requirements.

It is good to see that there are methods to keep temps really low when necessary.

No.  The Vr 1 Tappecue only went as low as 50°, not sure why it reads that way on Tappecue.net (it just shows Low on device), but until it hits 50° it is not accurate.  I would venture to guess the Belly was about 38° when the probe. went in!

You can see that left side looks hotter based on the jerky starting to dry.  Watch that as you may need to pull those pieces earlier than the rest or it may be really hard to chew.

I think that is just interaction with the meat, cure and smoke, it was not hot enough in there to do any cooking yet!  I think that is why the color is different!

Always wanted a cold smoker that I didn't have to use the amazn type products and could pretty much run as is. This review may have cost me a chunk of change.

I cannot find the size of the cooking grates online anywhere. Judging by the pictures of a full size pan and the advertised 1,830 in^2 of cooking surface, I am assuming the grates are roughly 15"x24". Does that sound correct?
